  • 1 cup all-purpose flour Feel free to experiment with whole wheat flour for a heartier bagel.
  • 2 teaspoons baking powder
  • 1 pinch salt Optional for extra flavor.
  • 1 cup + 2 tablespoons cottage cheese (2% or 4%) Make sure it's well-drained.
  • 1 egg optional for egg wash Brush on bagels for color and shine.

Preparation
  1. In a medium bowl, combine the all-purpose flour and baking powder. If using, add a pinch of salt.
  2. Create a well in the center and pour in the cottage cheese. Mix until a chunky dough forms.
  3. Turn the dough out onto a well-floured surface and knead for about 1-2 minutes until semi-smooth.
  4. Divide the dough into four equal portions and roll each into a log, then connect the ends to form bagels.
  5. Whisk the egg with a splash of water or milk and brush this over each bagel. Add your choice of toppings.
Cooking
  1. Preheat your air fryer to 300°F. Line or spray the basket with cooking spray.
  2. Place bagels in the air fryer, cooking in batches if necessary. Cook for about 15-17 minutes, checking around the 10-minute mark.
  3. Once golden brown and fluffy, remove from the air fryer and let cool for at least 15 minutes before slicing.

Notes

These bagels can be enjoyed with cream cheese, nut butter, or as a base for a savory breakfast sandwich. Store leftovers in an airtight container in the refrigerator for up to three days, or freeze them for up to two months.
