- Preheat your oven to 350°F (175°C).
- Slice the croissants in half horizontally.
- In a small bowl, combine the softened goat cheese, honey, and cinnamon, mixing until smooth.
- Generously spread this mixture on the bottom half of each croissant.
- Layer the thin apple slices on top of the goat cheese.
- If you like, scatter a handful of fresh arugula over the apples.
- Close the sandwiches with the top halves of the croissants.
- Place the sandwiches on a baking sheet and warm them in the oven for about 5-7 minutes until golden and crispy.
