- Melt the butter in a skillet over medium heat until it’s bubbling gently.
- In a bowl, whisk together the eggs, garlic powder, cayenne pepper, salt, and pepper until everything is blended smoothly.
- Pour the egg mixture into the skillet and scramble until they’re fully cooked.
- While the eggs are cooking, warm your tortillas in a separate pan or the microwave.
- On each tortilla, layer the scrambled eggs, crispy bacon, roasted potatoes (if using), and sprinkle with cheese.
- Roll the tortilla tightly to form your burrito.
- Place each burrito seam-side down in the skillet, toasting for a couple of minutes until the cheese melts and the tortilla turns golden.
- Serve while warm and enjoy every delicious bite!
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, microwave for a minute or two or warm in a skillet. Burritos can also be frozen for up to a month.
