- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the chopped bacon over medium heat until it’s crispy. Remove the bacon from the skillet but keep the drippings.
- Add the diced potatoes to the skillet. Sauté them until they are deliciously golden brown, about 8-10 minutes.
- Meanwhile, whisk the eggs and heavy cream together in a bowl, seasoning with salt and pepper.
- Pour the egg mixture evenly over the potatoes in the skillet.
- Sprinkle the crispy bacon and grated cheddar cheese on top.
- Allow the skillet to cook on the stovetop for about 3 minutes, or until the edges start to set.
- Transfer the skillet to the oven and bake for 15-20 minutes until the center is set.
- Finish by garnishing with fresh chives just before serving.
