  • 6 strips bacon (chopped)
  • 2 medium potatoes (diced)
  • 1/2 cup heavy cream
  • 1/4 cup fresh chives (chopped)
  • 1/2 cup cheddar cheese (grated)

  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the chopped bacon over medium heat until it’s crispy. Remove the bacon from the skillet but keep the drippings.
  3. Add the diced potatoes to the skillet. Sauté them until they are deliciously golden brown, about 8-10 minutes.
  4. Meanwhile, whisk the eggs and heavy cream together in a bowl, seasoning with salt and pepper.
  5. Pour the egg mixture evenly over the potatoes in the skillet.
  6. Sprinkle the crispy bacon and grated cheddar cheese on top.
  7. Allow the skillet to cook on the stovetop for about 3 minutes, or until the edges start to set.
  8. Transfer the skillet to the oven and bake for 15-20 minutes until the center is set.
  9. Finish by garnishing with fresh chives just before serving.

This frittata can be easily adapted with different ingredients such as turkey bacon, various cheeses, or add-ins like bell peppers and spinach. Enjoy it with sides like a fresh fruit salad or crispy toast.
