- Preheat your oven to 350°F (175°C).
- In a large bowl, mash the ripe bananas until smooth.
- Add the rolled oats, cinnamon, honey or maple syrup, vanilla extract, and a pinch of salt. Mix until well combined.
- If desired, fold in chopped nuts or chocolate chips.
- Spread the mixture into a greased baking dish, smoothing the top evenly.
- Bake for 20-25 minutes until the edges are golden and a toothpick inserted into the center comes out clean.
- Allow to cool before slicing into squares.
Notes
Store leftover bars in an airtight container at room temperature for up to a week or freeze individually wrapped for longer storage. Consider serving with Greek yogurt or fresh fruit.
