  • 1/2 teaspoon cinnamon Feel free to experiment with spices.
  • 1/4 cup honey or maple syrup Agave syrup is an alternative.
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped nuts or chocolate chips Optional for added texture and flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, cinnamon, honey or maple syrup, vanilla extract, and a pinch of salt. Mix until well combined.
  4. If desired, fold in chopped nuts or chocolate chips.
  5. Spread the mixture into a greased baking dish, smoothing the top evenly.
  6. Bake for 20-25 minutes until the edges are golden and a toothpick inserted into the center comes out clean.
  7. Allow to cool before slicing into squares.

Notes

Store leftover bars in an airtight container at room temperature for up to a week or freeze individually wrapped for longer storage. Consider serving with Greek yogurt or fresh fruit.
