Ingredients
  

For the Chicken
  • 1 pound chicken tenderloins Can substitute with chicken thighs or breasts.
  • 1 cup panko bread crumbs
  • 1/2 cup all-purpose flour
  • 1 large egg Beaten for coating.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying Ensure it's hot enough before frying.
For the Bang Bang Sauce
  • 1/2 cup mayonnaise Can be replaced with Greek yogurt for a lighter option.
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha sauce Adjust based on heat preference.

Method
 

Preparation
  1. Heat oil in a deep fryer or large skillet over medium heat.
  2. Set up your coating station: place flour in one dish, beaten egg in another, and panko bread crumbs in a third.
  3. Season the flour with salt and pepper.
  4. Dip each chicken tenderloin into the flour, then the egg, and finally coat with the panko breadcrumbs.
Cooking
  1. Carefully place the chicken into the hot oil and fry until golden brown and cooked through, about 4-5 minutes per side.
  2. In a bowl, whip together mayonnaise, sweet chili sauce, and sriracha.
  3. Once the chicken is done frying, drizzle the sauce over the crispy chicken and serve immediately.

Notes

For extra crunch, double-coat the chicken. You can also bake it at 400°F for 20-25 minutes.
