Preparation
- Heat oil in a deep fryer or large skillet over medium heat.
- Set up your coating station: place flour in one dish, beaten egg in another, and panko bread crumbs in a third.
- Season the flour with salt and pepper.
- Dip each chicken tenderloin into the flour, then the egg, and finally coat with the panko breadcrumbs.
Cooking
- Carefully place the chicken into the hot oil and fry until golden brown and cooked through, about 4-5 minutes per side.
- In a bowl, whip together mayonnaise, sweet chili sauce, and sriracha.
- Once the chicken is done frying, drizzle the sauce over the crispy chicken and serve immediately.
Notes
For extra crunch, double-coat the chicken. You can also bake it at 400°F for 20-25 minutes.
