Ingredients
  

For the chicken
  • 1 pound boneless, skinless chicken breasts Cut into bite-sized pieces
  • 2 tablespoons oil For cooking
  • Salt and pepper to taste For seasoning
For the rice and veggies
  • 2 cups cooked rice White or brown
  • 1 cup broccoli florets
  • 1 red bell pepper sliced
  • 1 carrot julienned
  • 3 green onions Chopped for garnish
For the sauce
  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce Adjust for spice level
  • 1 tablespoon soy sauce
For garnish
  • sesame seeds For garnish

Method
 

Preparation
  1. Cut the chicken breasts into bite-sized pieces and season them with salt and pepper.
  2. Heat oil in a large skillet over medium heat.
Cooking
  1. Add the chicken and cook for about 5-7 minutes until golden and thoroughly cooked. Remove the chicken from the skillet and set aside.
  2. In the same skillet, sauté the broccoli, red bell pepper, and carrot for 3-5 minutes until they're tender yet still crisp.
  3. While the veggies are cooking, whisk together the mayonnaise, sweet chili sauce, Sriracha, and soy sauce in a small bowl until smooth.
  4. Return the cooked chicken to the skillet, pour the sauce over it, and mix until everything is evenly coated.
Assembly and Serving
  1. Divide the cooked rice into serving bowls and top with the chicken and vegetable mixture.
  2. Garnish each bowl with chopped green onions and a sprinkle of sesame seeds.
  3. Serve immediately and enjoy!
