  • 1/4 cup butter Melted.
  • 2 tablespoons lemon juice Freshly squeezed.
  • 1/2 cup breadcrumbs Use gluten-free breadcrumbs for a gluten-free option.
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped parsley For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small saucepan, melt the butter over low heat. Once melted, stir in the lemon juice to combine.
  3. Arrange the cod fillets in a baking dish. Pour the butter and lemon mixture evenly over the fish.
  4. In a separate bowl, combine the breadcrumbs, garlic powder, salt, and black pepper. Sprinkle this mixture generously over the cod fillets.
Cooking
  1. Bake in the preheated oven for 15-20 minutes until the fish easily flakes with a fork and the breadcrumb topping is golden brown.
  2. Before serving, garnish with chopped parsley.

Notes

For extra crisp, broil the cod for the last minute of cooking. For variations, try adding grated Parmesan cheese, Red pepper flakes for spice, or switching herbs.
