Bourbon Banana Walnut Bread

Ingredients
  

Wet Ingredients
  • 3 pieces ripe bananas Use overripe bananas for sweetness
  • 1/4 cup bourbon Substitute with vanilla extract for a non-alcoholic version
  • 1/2 cup unsalted butter, softened Ensure it's at room temperature for optimal blending
  • 3/4 cup sugar
  • 2 large eggs Ensure at room temperature
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour Can be substituted with gluten-free flour blend
  • 1/2 cup chopped walnuts Can replace with semi-sweet chocolate chips or omit for nut-free

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. Mash the bananas in a large mixing bowl before stirring in the bourbon.
  3. Cream the butter and sugar together in a separate bowl until light and fluffy.
  4. Incorporate the eggs and vanilla into the butter-sugar mix, beating well to combine.
  5. In another bowl, mix the baking soda, salt, and flour.
  6. Gradually add the dry mix to the wet mix, alternating with the banana-bourbon mixture.
  7. Fold in the chopped walnuts carefully.
  8. Pour the batter into the greased loaf pan and smooth the top.
Baking
  1. Bake for 60-65 minutes, or until a toothpick inserted comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For enhanced flavor, serve warm with butter, or with vanilla ice cream. Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage. Thaw in the fridge overnight before warming.
