Preparation
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- Mash the bananas in a large mixing bowl before stirring in the bourbon.
- Cream the butter and sugar together in a separate bowl until light and fluffy.
- Incorporate the eggs and vanilla into the butter-sugar mix, beating well to combine.
- In another bowl, mix the baking soda, salt, and flour.
- Gradually add the dry mix to the wet mix, alternating with the banana-bourbon mixture.
- Fold in the chopped walnuts carefully.
- Pour the batter into the greased loaf pan and smooth the top.
Baking
- Bake for 60-65 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For enhanced flavor, serve warm with butter, or with vanilla ice cream. Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage. Thaw in the fridge overnight before warming.
