  • 2–3 large large eggs Use 3 for a hearty single serving
  • 1 tablespoon butter Or olive oil for a dairy-free option
  • to taste Salt and pepper For seasoning
  • 1/4 cup shredded cheddar cheese Substitute with Monterey Jack or pepper jack if desired
  • 3 tablespoons fresh salsa Store-bought or homemade
  • 1/2 avocado Cut into chunks (optional). Substitute with sliced tomato or a dollop of Greek yogurt.

Preparation
  1. Preheat a cast-iron skillet or a heavy-bottomed pan over low–medium heat for a minute.
  2. Crack the eggs into a medium bowl, whisk just enough to break the yolks, and season with salt and pepper.
  3. Add the butter to the preheated skillet and swirl until it coats the surface and stops foaming.
Cooking
  1. Pour the eggs into the pan, let them sit undisturbed for 20–30 seconds to set slightly.
  2. Using a silicone spatula, scrape the edges toward the center to create curds. Continue to gently fold until the eggs are softly set but not dry, about 1–2 minutes.
  3. Transfer the scrambled eggs to a bowl, top with shredded cheddar, fresh salsa, and cubed avocado.
Serving
  1. Add any extra toppings such as hot sauce, chopped cilantro, or a lime wedge and serve immediately.

Notes

Serve over warm cilantro-lime rice or black beans for a fuller burrito bowl feel. For variations, try adding cooked chorizo or breakfast sausage, or make it vegetarian with sautéed vegetables.
