Ingredients
  

Chicken mixture
  • 2 cups shredded cooked chicken Use rotisserie chicken for quick prep.
  • 1/2 cup buffalo sauce Adjust to taste if spiciness is a concern.
  • 1/4 cup chopped celery Adds crunch.
Assembly
  • 1 large cucumber Sliced in half lengthwise.
  • 1/4 cup crumbled blue cheese Optional, can substitute with feta or omit.

Preparation
  1. In a mixing bowl, combine the shredded chicken, buffalo sauce, chopped celery, and a pinch of salt and pepper. Stir until everything is well blended.
  2. Slice the cucumber in half lengthwise and scoop out the seeds to create a hollow center, making it ready for stuffing.
Assembly
  1. Generously fill each cucumber half with your buffalo chicken mixture.
  2. If you enjoy blue cheese, sprinkle it on top to add an extra splash of flavor.
  3. Garnish with fresh parsley for a pop of color and freshness.
  4. Carefully slice the filled cucumbers into bite-sized pieces and arrange them beautifully on a serving platter.

Notes

These rolls can be served alone as an appetizer or alongside a fresh salad. Best enjoyed fresh, but can be stored in an airtight container for 2-3 days.
