For the Sauce
  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard (Dijon or yellow)
  • 1 teaspoon pickle juice From the jar of pickles

Method

Preparation
  1. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, oregano, salt, and black pepper; set aside.
  2. Wash and cut the potatoes into chips, pat them dry with paper towels.
  3. In a large mixing bowl, combine the potato chips with 1 tablespoon of olive oil and half of the spice mix. Coat them thoroughly.
Cooking the Chips
  1. Spread the chips on a baking tray and bake in a preheated oven at 200°C (390°F) for 30–40 minutes. Alternatively, cook them in an air fryer for about 20 minutes until they're crispy and golden.
Cooking the Beef
  1. While the potatoes crisp up, heat the remaining tablespoon of olive oil in a frying pan over high heat. Add the lean beef mince, breaking it apart with a wooden spoon.
  2. Once browned, sprinkle in the remaining spice mix and cook until the meat is well seasoned and any excess moisture evaporates.
Making the Sauce and Assembling the Bowls
  1. In a separate small bowl, combine the mayonnaise, ketchup, mustard, and pickle juice. Stir well and adjust seasoning to taste.
  2. Once the potatoes are ready, divide them between your serving bowls. Add shredded lettuce, topped with cooked beef mince, cheese, and pickles.
  3. Drizzle with your burger sauce and serve immediately.

Notes

Store leftovers separately in airtight containers in the fridge. The cooked beef and potatoes can be refrigerated for up to 3 days. Reheat in the oven for optimal crispiness.
