Preparation
  1. Start by finely grating the carrot and the cheese using a box grater or food processor.
  2. Crack the eggs into a spacious mixing bowl.
Mixing
  1. In that same bowl, combine the grated carrot, cheese, and eggs. Stir well until you achieve a thick, cohesive batter.
Cooking
  1. Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it if needed.
  2. Spoon the carrot mixture onto the preheated waffle iron, spreading it out evenly.
  3. Cook for 4-6 minutes, or until they turn golden and crispy.
Serving
  1. Once cooked, allow the waffles to cool for a couple of minutes before serving.
  2. Cut them into baby-friendly pieces or serve them whole.

Notes
