  • Cooking spray or oil for greasing the muffin tin

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin generously with cooking spray or oil.
  2. In a mixing bowl, whisk together the cottage cheese, eggs, shredded cheese, and diced vegetables until well combined.
  3. Season the mixture with salt and pepper to your liking.
  4. Carefully pour the egg mixture into each muffin cup, filling them about two-thirds full to allow for rising.
Baking
