  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add the diced potatoes, cooking them until they are golden brown and crispy—this should take about 10 to 15 minutes. Stir occasionally to ensure even cooking.
  3. If you’re adding ham or bacon, toss it into the skillet now, cooking until it’s heated through.
  4. In a separate bowl, whisk the eggs together with a pinch of salt and pepper.
  5. Pour the whisked eggs over the browned potatoes and meat in the skillet.
  6. Gently stir the mixture until the eggs are just set, ensuring they remain fluffy.
  7. Remove the skillet from heat and sprinkle cheddar cheese on top, covering it for a minute to allow the cheese to melt.
  8. Serve your cheesy potato egg scramble hot, garnished with green onions or parsley if desired.

Notes
