  • 1 pound chicken (or your preferred protein) Feel free to swap out for shrimp or tofu.
  • 2 tablespoons olive oil Can substitute with avocado oil.
  • 1 medium onion, chopped Fresh ingredients are recommended for best flavor.
  • 3 cloves garlic, minced Use fresh garlic for enhanced flavor.
  • 1 medium bell pepper, sliced Use any colorful bell peppers available.
  • 1 cup cherry tomatoes, halved Fresh tomatoes are ideal.
  • 2 teaspoons Italian seasoning
  • to taste Salt and pepper
  • to garnish Fresh basil For garnish before serving.

Method
 

Cooking Instructions
  1. In a large skillet, heat the olive oil over medium heat until shimmering.
  2. Add the chopped onion and sauté for about 4-5 minutes until it turns golden brown.
  3. Toss in the minced garlic and sliced bell pepper. Cook for another 2-3 minutes until everything is aromatic.
  4. Next, add your protein of choice and cook until browned on all sides.
  5. Fold in the halved cherry tomatoes along with the Italian seasoning, stirring gently to combine.
  6. Season with salt and pepper, then let the mixture cook for an additional 5-10 minutes until the tomatoes soften.
  7. Just before serving, garnish the skillet with fresh basil.

Notes

Serve with a side of couscous or quinoa, or enjoy on pasta with crusty bread. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
