- In a large skillet, heat the olive oil over medium heat until shimmering.
- Add the chopped onion and sauté for about 4-5 minutes until it turns golden brown.
- Toss in the minced garlic and sliced bell pepper. Cook for another 2-3 minutes until everything is aromatic.
- Next, add your protein of choice and cook until browned on all sides.
- Fold in the halved cherry tomatoes along with the Italian seasoning, stirring gently to combine.
- Season with salt and pepper, then let the mixture cook for an additional 5-10 minutes until the tomatoes soften.
- Just before serving, garnish the skillet with fresh basil.
Notes
Serve with a side of couscous or quinoa, or enjoy on pasta with crusty bread. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
