  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa Spice level depends on the type of salsa used.
  • 2 cups brown rice, cooked Cauliflower rice can be used for a low-carb option.
  • 1 cup shredded cheese (cheddar or Mexican blend) Pepper jack cheese can add a spicy twist.
Seasonings
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
Garnish
  • Fresh cilantro for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the shredded chicken, black beans, corn, salsa, cooked rice, chili powder, cumin, salt, and pepper until well combined.
  3. Transfer the mixture into a greased casserole dish, spreading it out evenly.
  4. Top it off with shredded cheese for that gooey melty finish.
Baking
  1. Bake in the oven for 25-30 minutes, until the casserole is heated through and the cheese is bubbling and golden.
  2. Finish with a sprinkle of fresh cilantro before serving.

Notes

This casserole can be served on its own or paired with a side salad or warm tortillas. Storage: Store leftovers in an airtight container in the fridge for up to three days or freeze for longer storage. Reheat in the oven or microwave.
