  • 3-4 pieces boneless, skinless chicken breasts Marinated for extra flavor if desired.
  • 1 pack Lo Mein noodles (fresh or dried)
  • 1 piece red bell pepper Chopped.
  • 1 piece yellow bell pepper Chopped.
  • 2 pieces carrots Thinly sliced.
  • 2 pieces green onions Chopped.
  • 0.25 cup low-sodium soy sauce
  • 1 tablespoon sesame oil For sautéing.
  • 3 cloves fresh minced garlic

Method
 

Preparation
  1. Chop all vegetables into bite-sized pieces for even cooking.
  2. Cook the lo mein noodles according to the package instructions until just al dente. Drain and set aside.
Cooking
  1. In a large skillet or wok, heat the sesame oil over medium-high heat.
  2. Add the chicken, cooking until golden brown and fully cooked, approximately 6-8 minutes. Remove and set aside.
  3. In the same pan, toss in the chopped bell peppers, carrots, and green onions. Stir-fry for 3-4 minutes until tender yet crisp.
  4. Return the cooked chicken to the skillet along with the lo mein noodles.
  5. Pour in the low-sodium soy sauce and minced garlic, mixing well.
  6. Toss everything together until evenly mixed.
  7. Serve hot with extra soy sauce on the side.

Notes

For added texture, sprinkle sesame seeds or crushed peanuts on top. Pair with a side salad or steamed dumplings for a complete meal.
