Preparation
- Chop all vegetables into bite-sized pieces for even cooking.
- Cook the lo mein noodles according to the package instructions until just al dente. Drain and set aside.
Cooking
- In a large skillet or wok, heat the sesame oil over medium-high heat.
- Add the chicken, cooking until golden brown and fully cooked, approximately 6-8 minutes. Remove and set aside.
- In the same pan, toss in the chopped bell peppers, carrots, and green onions. Stir-fry for 3-4 minutes until tender yet crisp.
- Return the cooked chicken to the skillet along with the lo mein noodles.
- Pour in the low-sodium soy sauce and minced garlic, mixing well.
- Toss everything together until evenly mixed.
- Serve hot with extra soy sauce on the side.
Notes
For added texture, sprinkle sesame seeds or crushed peanuts on top. Pair with a side salad or steamed dumplings for a complete meal.
