Ingredients

  • 1.5-2 lb boneless, skinless chicken breasts thinly sliced against the grain
  • 8 oz Lo Mein noodles fresh or dried
  • 1 large red bell pepper sliced into strips
  • 1 large yellow bell pepper sliced into strips
  • 2 medium carrots thinly sliced on the bias
  • 2 stalks green onions chopped (white and green parts separated if possible)
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh garlic minced
  • as needed Neutral cooking oil for stir-frying (like canola, grapeseed, or vegetable)

Method
 

Preparation
  1. Begin by cutting the chicken and vegetables into bite-sized pieces. Don’t forget to mince the garlic, too!
Cooking Noodles
  1. Prepare the Lo Mein noodles according to the package instructions until al dente. Drain and toss with a little oil to prevent sticking.
Cooking Chicken
  1. In a large skillet or wok, heat 1-2 tablespoons of neutral oil over medium-high heat.
  2. Add the chicken in a single layer, searing it without crowding the pan for 3-4 minutes.
  3. Toss and cook for another 2-4 minutes until golden and cooked through. Remove the chicken and set aside.
Sautéing Veggies
  1. In the same pan, add bell peppers and carrots, stirring for 3-4 minutes until tender yet crisp.
  2. Toss in the white parts of the green onions and minced garlic last, cooking for an additional 30 seconds.
Combine Ingredients
  1. Return the chicken to the skillet, adding drained noodles, soy sauce, and sesame oil.
  2. Toss everything for 1-2 minutes until well-coated and heated through.
Finishing Touches
  1. Give it a taste, adjust seasoning as needed, and serve immediately, adding extra soy sauce on the side if desired.

Notes

Garnish with the green parts of the chopped green onions and a dusting of sesame seeds. Pair with crispy spring rolls or a light cucumber salad. Best served with chilled iced tea.
