- Begin by cutting the chicken and vegetables into bite-sized pieces. Don’t forget to mince the garlic, too!
Cooking Noodles
- Prepare the Lo Mein noodles according to the package instructions until al dente. Drain and toss with a little oil to prevent sticking.
Cooking Chicken
- In a large skillet or wok, heat 1-2 tablespoons of neutral oil over medium-high heat.
- Add the chicken in a single layer, searing it without crowding the pan for 3-4 minutes.
- Toss and cook for another 2-4 minutes until golden and cooked through. Remove the chicken and set aside.
Sautéing Veggies
- In the same pan, add bell peppers and carrots, stirring for 3-4 minutes until tender yet crisp.
- Toss in the white parts of the green onions and minced garlic last, cooking for an additional 30 seconds.
Combine Ingredients
- Return the chicken to the skillet, adding drained noodles, soy sauce, and sesame oil.
- Toss everything for 1-2 minutes until well-coated and heated through.
Finishing Touches
- Give it a taste, adjust seasoning as needed, and serve immediately, adding extra soy sauce on the side if desired.
Notes
Garnish with the green parts of the chopped green onions and a dusting of sesame seeds. Pair with crispy spring rolls or a light cucumber salad. Best served with chilled iced tea.
