  • 3-4 pieces boneless, skinless chicken breasts
  • 8 oz Lo Mein noodles (fresh or dried) Cook according to package instructions
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh garlic, minced

Method
 

Preparation
  1. Prep all ingredients: chop vegetables into bite-sized pieces.
  2. Cook the Lo Mein noodles according to the package instructions until al dente, then drain and set aside.
Cooking
  1. In a large skillet or wok, heat the sesame oil over medium-high heat.
  2. Sauté the chicken for 6-8 minutes until golden brown and fully cooked. Remove the chicken and set aside.
  3. In the same pan, stir-fry the bell peppers, carrots, and green onions for about 3-4 minutes until tender yet crisp.
  4. Return the cooked chicken to the skillet, then add the Lo Mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well mixed and heated through.
  5. Serve immediately, drizzling with extra soy sauce if desired.

Notes

For a kick, consider adding chili paste. Store leftovers in an airtight container for up to 3 days. Reheat with a splash of water or soy sauce to prevent drying out.
