Preparation
- Prep all ingredients: chop vegetables into bite-sized pieces.
- Cook the Lo Mein noodles according to the package instructions until al dente, then drain and set aside.
Cooking
- In a large skillet or wok, heat the sesame oil over medium-high heat.
- Sauté the chicken for 6-8 minutes until golden brown and fully cooked. Remove the chicken and set aside.
- In the same pan, stir-fry the bell peppers, carrots, and green onions for about 3-4 minutes until tender yet crisp.
- Return the cooked chicken to the skillet, then add the Lo Mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well mixed and heated through.
- Serve immediately, drizzling with extra soy sauce if desired.
Notes
For a kick, consider adding chili paste. Store leftovers in an airtight container for up to 3 days. Reheat with a splash of water or soy sauce to prevent drying out.
