  • 2 cups Cooked chicken breast, shredded or finely chopped
  • 2 cups Cooked rice Can substitute quinoa for a gluten-free option
  • 1 large Egg Can substitute with flaxseed meal or chia seed mixture for vegan option
  • 1 cup Grated cheese (any type you prefer) Use a mixture of cheeses for added flavor
  • 1 cup Carrots, finely grated
  • 1 cup Zucchini, squeezed dry Squeeze excess moisture to avoid soggy bites
  • 1 cup Bell peppers, diced small
  • 1 cup Green onions, chopped
  • 1 teaspoon Garlic powder
  • Fresh herbs optional parsley or cilantro

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked chicken, rice, grated carrot, zucchini, bell peppers, and green onions.
  3. Add the grated cheese, garlic powder, salt, and pepper. Give it a thorough mix until everything is well combined.
  4. Crack the egg into the mixture and stir until evenly coated.
  5. Using your hands, form tablespoon-sized balls.
  6. Arrange the balls on a lined baking sheet, spacing them out.
  7. Bake for 20-25 minutes or until golden brown and cooked through, turning halfway for even browning.
  8. Serve warm with your favorite dipping sauce or a fresh salad.

Notes

These bites can be paired with dips like ranch, barbecue, hummus, or tzatziki. Store leftovers in an airtight container in the fridge for up to three days, or freeze for up to three months.
