Preparation
- In a large mixing bowl, combine the chopped strawberries, Greek yogurt, honey, and vanilla extract. Mix thoroughly until uniform.
- Using about 2 tablespoons of the yogurt mixture, form small clusters and place them on a parchment-lined baking sheet. Aim for around 10 clusters.
- Place the baking sheet in the freezer for about 1 to 2 hours, until the yogurt clusters are completely frozen.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 15 to 30-second intervals, stirring until fully melted.
Coating and Freezing
- Remove the frozen yogurt clusters from the freezer. Dip each cluster into the melted chocolate using a spoon, ensuring they are well-coated.
- Place the chocolate-coated clusters back on the lined baking sheet. Optionally, sprinkle a bit of sea salt on top for added flavor.
- Return the clusters to the freezer for a few minutes to help the chocolate harden.
