Preparation
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the shredded chicken, cottage cheese, half of the mozzarella, and half of the Parmesan. Season with salt and pepper to taste.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Spoon the chicken mixture over the marinara sauce, making sure it’s evenly distributed.
- Pour the remaining marinara sauce over the top, then sprinkle the rest of the mozzarella and Parmesan cheeses.
Baking
- Bake for 25-30 minutes, or until the cheese is gooey, bubbly, and golden brown.
- Allow to cool for a few minutes before serving to ensure it holds together nicely.
Notes
This dish pairs well with a simple green salad or steamed veggies. You can also enjoy it over pasta or quinoa for added fullness. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
