- In your blender, toss in the cottage cheese, peanut butter, honey (or maple syrup), vanilla extract, and a pinch of salt.
- Blend everything until it reaches a smooth and creamy consistency.
- Give it a taste and adjust the sweetness if you desire a bit more sweetness.
- Serve immediately for a light texture, or chill in your refrigerator for about 30 minutes for a thicker mousse.
Notes
For a silkier texture, blend longer. Add granola or shaved dark chocolate on top for crunch. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage.
