Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the cottage cheese, marinara sauce, and season with salt and pepper.
- In a baking dish, drizzle a bit of olive oil to coat the bottom lightly.
- Layer in your cottage cheese mixture evenly across the bottom.
- Top with chopped bell peppers, sliced mushrooms, chopped spinach, and olives. Sprinkle diced onions on top.
- Add a generous layer of shredded mozzarella cheese on top.
Baking
- Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbling and golden.
- Once done, let it cool slightly. Garnish with fresh basil before serving.
Notes
Store leftovers in an airtight container in the fridge for up to three days. For freezing, transfer portions into freezer-safe containers and thaw overnight before reheating.
