Preparation
- Preheat your oven to 400°F (200°C).
- In a large skillet set over medium heat, cook the bacon until crispy, approximately 5-7 minutes. Remove the bacon and let it drain on paper towels.
- Once cool, crumble the bacon into bite-sized pieces.
- Rub each chicken breast with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and black pepper.
- In the same skillet, sear the seasoned chicken breasts for about 4-5 minutes on each side until golden brown.
Cooking
- As the chicken cooks, chop green onions and prepare your barbecue sauce.
- Reduce the heat and pour the barbecue sauce over the chicken. Top with shredded cheddar cheese.
- Sprinkle the crumbled bacon over the cheese.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes or until the chicken is fully cooked and the cheese is melted.
- Garnish with chopped green onions and optional red pepper flakes. Allow to rest for a few moments before serving.
Notes
For a twist, add jalapeños for spice or honey mustard glaze instead of barbecue sauce. You can skip the searing step to save time but ensure you bake longer to cook through. Let the dish rest for a few minutes after baking for juicy chicken.
