For the Pasta
  • 12 ounces penne, fettuccine, or spaghetti Choose your favorite pasta.
  • Salt for pasta water Elevates pasta flavor.
For the Sauce
  • 2 tablespoons unsalted butter Foundation for a creamy sauce.
  • 4 cloves garlic, minced Adds aromatic depth.
  • 1 teaspoon smoked paprika Adds a smoky note.
  • 1 cup heavy cream Key for a velvety sauce.
  • ½ cup chicken broth Adds savory depth.
  • ¼ cup grated Parmesan cheese For umami kick and creaminess.
  • ½ cup fresh parsley, chopped (optional) For a splash of freshness.
  • Red pepper flakes (optional) For extra kick.
  • 1 tablespoon fresh lemon juice Balances the richness.
  • Sautéed vegetables (optional) Add bell peppers, onions, etc.
  • Shrimp (optional) Can replace chicken.

Method
 

Prepare the Chicken
  1. Season the chicken breasts with Cajun seasoning, salt, and pepper.
  2. In a large pan, heat olive oil over medium-high heat.
  3. Sear the chicken for about 6-7 minutes on each side until golden brown and cooked through.
  4. Remove and let rest.
Cook the Pasta
  1. In a large pot, bring salted water to a boil.
  2. Add your chosen pasta and cook according to package instructions until al dente.
  3. When done, reserve a cup of pasta water, then drain.
Make the Cajun Cream Sauce
  1. In the same pan used for the chicken, melt the butter.
  2. Add minced garlic and sauté until fragrant.
  3. Stir in the Cajun seasoning and smoked paprika.
  4. Pour in chicken broth and then whisk in the heavy cream.
  5. Allow it to simmer gently, letting it thicken slightly.
  6. Stir in the Parmesan cheese until melted.
Combine Everything
  1. Slice the chicken and return it to the creamy sauce.
  2. Toss in the drained pasta, adding reserved pasta water as needed.
  3. Finish with fresh lemon juice for brightness.

Notes

To store leftovers, allow the dish to cool, then refrigerate in an airtight container for 3-4 days. Reheat by adding a splash of cream or broth to revive sauce.
