  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces Approximately 3-4 breasts
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese, softened Ensure it's softened for easier mixing
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste Salt and pepper
  • 1–2 tbsp oil for cooking Use for sautéing the chicken

Method
 

Preparation
  1. Pat the chicken pieces dry, then season lightly with salt, pepper, garlic powder, and onion powder.
  2. Heat oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until golden brown and cooked through, about 5-7 minutes.
Cooking
  1. Reduce the heat to medium-low. Stir in the cream cheese and chicken broth, mixing until smooth.
  2. Gently add the gnocchi and spinach, stirring to combine. Cover and let simmer for about 5-7 minutes or until the gnocchi is tender.
  3. Fold in the shredded cheddar cheese until melted. Adjust seasoning with salt and pepper as needed.
Serving
  1. Serve immediately, garnished with extra cheddar or a sprinkle of black pepper, if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Add a splash of chicken broth when reheating to restore creamy texture. Can be frozen for up to a month.
