Preparation
  1. Boil the eggs: Cook the eggs in boiling water for about 6-7 minutes until the whites are set but the yolks remain runny. Cool them immediately under cold water before peeling.
  2. Prepare the yogurt mix: In a mixing bowl, combine the Greek yogurt with your choice of chopped fresh herbs. Season with salt and pepper. Adjust to taste.
  3. Smash the eggs: On a plate, gently smash the peeled soft-cooked eggs. Sprinkle with salt and pepper to enhance their flavor.
  4. Combine: Generously spoon the herbed yogurt mixture over the smashed eggs, making sure to cover them well.
  5. Add a drizzle: If desired, finish off with a light drizzle of olive oil and serve immediately.

Notes

For best presentation, serve on a textured plate with extra herbs or paprika. Pairs well with crusty bread or salad.
