  • 1 cup cream cheese, softened Substitute with Greek yogurt for a lighter option.
  • 1 cup shredded mozzarella cheese
  • 1 cup broccoli florets (fresh or frozen) Can be substituted with other vegetables.
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • 1/4 cup Parmesan cheese, grated

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, warm the olive oil over medium heat. Add the broccoli and sauté until it's tender.
  3. In a large mixing bowl, combine the shredded chicken, softened cream cheese, mozzarella cheese, cooked broccoli, chicken broth, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well-blended and creamy.
  4. Pour the mixture into a greased baking dish, spreading evenly across the bottom.
  5. Generously sprinkle the grated Parmesan cheese on top.
  6. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbling and the top is golden brown.
  7. Allow it to cool for a few minutes before serving.

Notes

Pair with a salad or cauliflower rice for a complete meal. Store leftovers in an airtight container; it can be kept in the fridge for up to 3 days or frozen for up to a month.
