Ingredients
  

Chicken and Marinade
  • 4 pieces Chicken Breasts (or Thighs) Cut into desired portions
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 0.5 tablespoon Nonstick Cooking Spray To coat the baking sheet
Coating
  • 1 cup Flour (or almond flour for gluten-free)
  • 2 large Eggs
  • 2 tablespoons Hot Sauce For the egg wash
  • 4 cups Cornflakes (or gluten-free cornflakes) Crushed for coating
  • 1 teaspoon Paprika
  • 2 teaspoons Seasoning Mix (salt, chili powder, black pepper, cayenne pepper) For coating
Hot Honey Sauce
  • 0.5 cup Honey (or maple syrup for vegan alternative)
  • 2 tablespoons Additional Hot Sauce
  • 4 tablespoons Butter (or plant-based butter)
  • 0.25 cup Light Brown Sugar
  • 2 tablespoons Apple Cider Vinegar
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Mustard Powder

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Prepare your baking sheet by lightly coating it with nonstick cooking spray.
  3. In a shallow bowl, mix the flour, salt, pepper, and paprika.
  4. In another bowl, whisk together the eggs and hot sauce.
  5. In a third bowl, crush the cornflakes and mix with the seasoning blend.
Coating the Chicken
  1. Dip each piece of chicken into the flour mixture, then the egg wash, and finally into the cornflakes for an even coating.
  2. Arrange the coated chicken pieces onto the prepared baking sheet and spritz with nonstick spray.
Baking
  1. Bake the chicken in the preheated oven for 25-30 minutes or until golden brown and cooked through.
Making Hot Honey Sauce
  1. While the chicken bakes, combine butter, honey (or maple syrup), light brown sugar, apple cider vinegar, additional hot sauce, garlic powder, onion powder, and mustard powder in a saucepan over medium heat until melted and mixed.
Serving
  1. Drizzle the hot honey sauce over the baked chicken before serving.

Notes

For best results, let the chicken rest after coating to meld the flavors. Experiment with spices to personalize flavor.
