Ingredients
  

For the Salmon Bites
  • 1 lb Salmon fillets Cut into bite-sized pieces
  • 1 cup Panko breadcrumbs For coating
  • 1/2 cup All-purpose flour For breading
  • 1 large Egg Beaten for breading
  • 1/2 cup Mayonnaise For the sauce
  • 1/4 cup Sweet chili sauce For the sauce
  • 1-2 tbsp Sriracha Adjust to taste for spiciness
  • 2 stalks Green onions Sliced for garnish
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the salmon fillets into bite-sized pieces. Season with salt and pepper.
  3. Set up a breading station: Put all-purpose flour in one bowl, beaten egg in another, and Panko breadcrumbs in a third.
Breading and Baking
  1. Coat each salmon piece in flour, dip it in egg, and then press firmly into the Panko breadcrumbs.
  2. Arrange the breaded salmon bites on the prepared baking sheet. Bake for 12-15 minutes, or until golden brown and crispy.
Making the Sauce
  1. In a separate bowl, combine mayonnaise, sweet chili sauce, and Sriracha to create your delicious Bang Bang sauce.
Serving
  1. Once the salmon bites are done, drizzle the sauce over them and garnish with sliced green onions. Serve immediately and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. For freezing, place cooled bites in a freezer-safe bag.
