Preparation
  1. Place the chicken thighs into your crock pot.
  2. In a separate bowl, blend together the bourbon, soy sauce, brown sugar, minced garlic, and grated ginger.
  3. Pour this mixture over the chicken, ensuring it’s well-coated.
  4. Cover your crock pot and set it to low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken if preferred, then stir to combine with the sauce.
  6. Serve topped with fresh green onions.

Notes

For best flavor, marinate the chicken in the bourbon mixture for a few hours (or overnight). You can add veggies to the slow cooker or enjoy with side dishes like rice, noodles, or roasted vegetables. Store leftovers in an airtight container for up to 3-4 days or freeze for 3 months.
