  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour Could use oat flour for a gluten-free version.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9x5-inch loaf pan by greasing it or lining it with parchment paper.
  3. In a large bowl, mash the ripe bananas using a fork until smooth.
  4. Stir in the melted butter until well mixed.
  5. Add the sugar, beaten egg, and vanilla extract. Mix until combined.
  6. Sprinkle the baking soda and salt over your mixture and stir gently.
  7. Add the flour, mixing just until it disappears; be careful not to overmix.
  8. Pour the batter into the prepared loaf pan and spread it out evenly.
Baking
  1. Bake for 50 to 60 minutes, or until a toothpick inserted comes out clean.
  2. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely before slicing.

Notes

For extra flavor, consider adding chopped nuts or chocolate chips. The banana bread is best enjoyed warm with butter or cream cheese.
