Puff Pastry and Filling
  • 2 sheets puff pastry (thawed)
  • 6 large eggs
  • 1 cup diced ham Feel free to use leftover ham.
  • 1 cup shredded cheddar cheese You can experiment with different types of cheese.
Additional Ingredients
  • 1 tbsp butter For brushing
  • 2 tbsp milk For scrambled eggs
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 large egg (beaten) For egg wash

Preparation
  1. Preheat the Oven: Set your oven to 400°F and line a baking sheet with parchment paper.
  2. Scramble the Eggs: In a mixing bowl, whisk together the eggs with milk, salt, and pepper until well combined.
  3. Prepare the Pastry: Cut the thawed puff pastry into approximately 4x4 inch squares.
Assembly and Baking
  1. Fill the Pockets: Spoon the scrambled egg mixture, diced ham, and cheddar cheese onto the center of each pastry square.
  2. Form the Pockets: Fold each square over to create a pocket, sealing the edges well by pressing them with a fork. Brush the tops with beaten egg.
  3. Bake: Arrange the pockets on the baking sheet and bake for 18 to 22 minutes, until golden brown.
Cooling
  1. Let them cool slightly before serving.

Notes

Serve with a fresh side salad or fruit, and consider offering a tangy dipping sauce like mustard or salsa. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
