  • 1/2 cup cottage cheese Can substitute with Greek yogurt for a tangy twist.
  • 1/4 cup shredded cheddar cheese Swap out for feta cheese for a different flavor.
  • 2 tablespoons milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons chopped fresh chives
  • 1/4 cup diced bell pepper

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with nonstick spray.
  2. In a blender or food processor, combine the eggs, cottage cheese, milk, salt, and pepper. Blend until smooth and frothy.
  3. Stir in the shredded cheddar cheese, chopped chives, and diced bell pepper.
  4. Pour the mixture evenly into the prepared muffin tin cups.
  5. Bake for 16-18 minutes, or until the bites are puffed and set.
  6. Allow to cool slightly before carefully removing from the tin. Serve warm for the best flavor.

Notes

These egg bites can be stored in an airtight container in the refrigerator for 3-4 days or frozen for longer storage. Reheat in the microwave or oven.
