- In a blender or food processor, combine the eggs, cottage cheese, milk, salt, and pepper. Blend until smooth and frothy.
- Stir in the shredded cheddar cheese, chopped chives, and diced bell pepper.
- Pour the mixture evenly into the prepared muffin tin cups.
- Bake for 16-18 minutes, or until the bites are puffed and set.
- Allow to cool slightly before carefully removing from the tin. Serve warm for the best flavor.
