Preparation
- Preheat your oven to 350°F (175°C) and grease a muffin tin with butter or non-stick spray.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until well combined.
- In another bowl, mix together the milk, eggs, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing to keep the muffins light.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
Baking
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.
Notes
Store muffins in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. Thaw at room temperature or reheat in the microwave.
