  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt

  • 1 cup milk (or almond milk for a dairy-free option)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup melted butter (plus more for greasing)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with butter or non-stick spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until well combined.
  3. In another bowl, mix together the milk, eggs, vanilla extract, and melted butter.
  4. Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing to keep the muffins light.
  5. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
Baking
  1. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.

Notes

Store muffins in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. Thaw at room temperature or reheat in the microwave.
