Garlic Butter Beef Cheeseburger Rollups

Handheld, cheesy rollups filled with seasoned ground beef and cheddar, wrapped in flour tortillas and baked to a golden crisp in garlic butter.

  • 1 lb ground beef (80/20 for flavor) Lean beef can be used if fat is drained.
  • 1 cup shredded cheddar cheese Sharp cheddar adds more bite; Monterey Jack or mozzarella are good swaps.
  • 4 large flour tortillas 10–12-inch works best for a tight roll.
  • 4 tablespoons garlic butter Room temperature for easy spreading.
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment or lightly oil it.
  2. Heat a skillet over medium heat. Add the ground beef and break it up with a spoon. Cook until no pink remains, about 6–8 minutes.
  3. Drain excess grease if necessary. Return the beef to the skillet and stir in onion powder, garlic powder, salt, and pepper. Taste and adjust seasoning. Remove from heat.
  4. Lay the tortillas flat and spread 1 tablespoon of garlic butter evenly over each one.
  5. Place about one-quarter of the beef mixture in the center of each tortilla. Sprinkle roughly 1/4 cup shredded cheddar over the beef.
  6. Tuck in the sides and roll each tortilla tightly, seam-side down. Place them on the prepared baking sheet.
  7. Brush the tops with any remaining garlic butter.
Baking
  1. Bake for 15–20 minutes, until the tortillas are golden brown and crisp. For a deeper color, broil for 1–2 minutes at the end.
  2. Slice each roll on the diagonal and serve warm.

Notes

Serves well with sliced pickles, ketchup, mustard, or slaw. Store leftovers in an airtight container for up to 3–4 days.
