  • 1 lb ground chicken
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1/2 cup breadcrumbs Use plant-based breadcrumbs for a variation.
  • 1/4 cup chopped parsley Can substitute with fresh herbs.
  • 1 piece egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/4 cup milk Use non-dairy milk to make the recipe dairy-free.

Preparation
  1. Preheat your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper or lightly oiling it.
  2. In a large mixing bowl, combine the ground chicken, Parmesan cheese, minced garlic, breadcrumbs, chopped parsley, egg, salt, black pepper, Italian seasoning, and milk. Mix until well combined.
  3. Divide the mixture into six equal portions and shape each into a mini loaf. Place them on the prepared baking sheet.
  4. Bake in the preheated oven for 25-30 minutes or until they are golden brown and the internal temperature reaches 165°F (74°C).
  5. Allow the mini loaves to rest for five minutes before serving.

Notes

These mini loaves can be enjoyed with sides like creamy mashed potatoes, salad, or marinara sauce. Store leftovers in an airtight container for up to three days. For freezing, wrap each loaf and store in a freezer-safe bag for up to three months.
