Preparation
- Preheat your oven to 350°F (175°C) and lightly grease or line a loaf pan with parchment paper.
- In a large mixing bowl, add ground chicken, breadcrumbs, Parmesan cheese, minced garlic, onion, milk, beaten egg, salt, black pepper, Italian seasoning, and parsley.
- Mix gently until just combined, being careful not to overmix as it can make the meatloaf dense.
- Transfer the mixture to the prepared loaf pan. Press it down lightly for an even shape.
Cooking
- Bake in your preheated oven for 45-55 minutes. Use a meat thermometer to check that the internal temperature reaches 165°F (75°C).
- Once done, allow the meatloaf to rest for 5-10 minutes before slicing it into warm, flavorful portions.
Notes
You can substitute ground turkey for the ground chicken if you prefer. Whole wheat breadcrumbs can add a nutty flavor. Serve with sides like mashed potatoes or roasted vegetables.
