  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 cup onion, finely chopped
  • 1/2 cup milk
  • 1 large egg, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/4 cup fresh parsley, chopped

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease or line a loaf pan with parchment paper.
  2. In a large mixing bowl, add ground chicken, breadcrumbs, Parmesan cheese, minced garlic, onion, milk, beaten egg, salt, black pepper, Italian seasoning, and parsley.
  3. Mix gently until just combined, being careful not to overmix as it can make the meatloaf dense.
  4. Transfer the mixture to the prepared loaf pan. Press it down lightly for an even shape.
Cooking
  1. Bake in your preheated oven for 45-55 minutes. Use a meat thermometer to check that the internal temperature reaches 165°F (75°C).
  2. Once done, allow the meatloaf to rest for 5-10 minutes before slicing it into warm, flavorful portions.

Notes

You can substitute ground turkey for the ground chicken if you prefer. Whole wheat breadcrumbs can add a nutty flavor. Serve with sides like mashed potatoes or roasted vegetables.
