Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine oats, mashed banana, applesauce, nut butter, egg (or flax egg), vanilla, and cinnamon. Stir until well mixed.
- Using a cookie scoop or a spoon, form balls of the mixture (about 1-1/2 to 2 tablespoons each) and place them on the baking sheet. Flatten them slightly.
Baking
- Bake in the preheated oven for approximately 10 minutes, until the edges turn golden brown.
- Allow the cookies to cool on a wire rack before serving.
Notes
These cookies can be served warm for breakfast or as an afternoon snack. They pair well with milk or yogurt and can be frozen for up to three months.
