Preparation
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, mix together the yellow cake mix, water, vegetable oil, and eggs. Beat for about 2 minutes until well combined.
Baking
- Pour the batter into the prepared baking pan. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely.
Topping
- In a separate bowl, combine the softened cream cheese and powdered sugar. Mix until smooth.
- Fold in the whipped topping, crushed pineapple, and shredded coconut until everything is well mixed.
Assembly
- Once your cake has completely cooled, spread the cream cheese mixture over the top.
- Optionally, garnish with sliced strawberries or other fresh fruit.
- Chill in the refrigerator for at least 1 hour before serving. Cut into squares and enjoy!
Notes
For a more vibrant cake, consider adding a teaspoon of vanilla extract to the batter. To store leftovers, keep in an airtight container in the refrigerator for up to 3-4 days. Freezing is also an option; slice and wrap pieces tightly for up to 2 months.
