- Warm a non-stick skillet over medium heat and lightly coat it with cooking spray or oil.
- In a mixing bowl, combine Greek yogurt, ranch seasoning, and shredded chicken. Stir until well mixed.
- Lay the low-carb tortilla flat and spread the chicken mixture over one half of it.
- Crumble the Laughing Cow cheese over the chicken and carefully fold the tortilla in half.
- Transfer the quesadilla to the skillet and cook for about 3-4 minutes on each side until golden brown and crispy.
- Remove from heat, slice into wedges, and serve warm.
Notes
