Ingredients
  

For the Quesadilla
  • 1 piece low-carb tortilla
  • 1/4 cup Greek yogurt Can be substituted with sour cream
  • 2 wedges Laughing Cow cheese Feel free to use your favorite cheese
  • 1 cup cooked, shredded chicken
  • 1 tablespoon ranch seasoning
  • As needed cooking spray or oil For frying

Method
 

Preparation
  1. Warm a non-stick skillet over medium heat and lightly coat it with cooking spray or oil.
  2. In a mixing bowl, combine Greek yogurt, ranch seasoning, and shredded chicken. Stir until well mixed.
  3. Lay the low-carb tortilla flat and spread the chicken mixture over one half of it.
  4. Crumble the Laughing Cow cheese over the chicken and carefully fold the tortilla in half.
  5. Transfer the quesadilla to the skillet and cook for about 3-4 minutes on each side until golden brown and crispy.
  6. Remove from heat, slice into wedges, and serve warm.

Notes

For variations, consider adding sautéed vegetables or swapping ranch for taco seasoning. Serve with salsa or guacamole for added flavor.
