Ingredients
  

Main Ingredients
  • 10 whole eggs, whisked
  • 1/2 cup shredded cheese (cheddar or your preference)
  • 1/2 cup cottage cheese
  • 1/2 pound ground breakfast sausage, cooked
  • Alpine Touch seasoning (or salt and pepper) to taste
  • Avocado oil or olive oil for greasing the muffin tin

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin generously with avocado or olive oil.
  3. In a large bowl, combine the whisked eggs, shredded cheese, cottage cheese, cooked sausage, and your seasoning of choice. Mix until all ingredients are well incorporated.
  4. Pour the mixture evenly into the prepared muffin tin, filling each cavity about halfway.
Baking
  1. Bake for 15 minutes, or until the centers are fully set (a toothpick should come out clean).
  2. Allow the egg bites to cool for a few minutes before removing from the tin.

Notes

These egg bites keep well in the refrigerator for up to three days, making them perfect for meal prep! They can also be frozen for longer storage. For extra flavor, consider adding sautéed spinach or bell peppers to the mixture.
