  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika

  • 1 cup mixed vegetables (optional) Can include peas, carrots, or green beans.

Method
 

Preparation
  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper, ensuring even coating.
  2. Heat a skillet over medium heat and sear the chicken for about 3–4 minutes on each side until golden brown. Set aside.
  3. In a bowl, mix half of the BBQ sauce with honey. Optionally, add a splash of soy sauce and minced garlic.
  4. In the same skillet, toast the uncooked rice for 1–2 minutes until fragrant.
Cooking
  1. Pour in the chicken broth and stir in half of the BBQ sauce mixture. Return the chicken to the skillet and drizzle the remaining sauce over the top.
  2. Cover the skillet and let it simmer on low heat for 15 minutes.
  3. After 15 minutes, add the mixed vegetables, cover again, and cook for an additional 5 minutes until rice is tender.
Serving
  1. Let the dish sit for about 5 minutes before serving. Garnish with chopped green onions.

Notes

For a deeper flavor, consider marinating the chicken in the BBQ sauce mixture for a few hours. You can substitute chicken with turkey or tofu, and use brown rice for a healthier option, but cooking time will vary.
