Preparation
- Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper, ensuring even coating.
- Heat a skillet over medium heat and sear the chicken for about 3–4 minutes on each side until golden brown. Set aside.
- In a bowl, mix half of the BBQ sauce with honey. Optionally, add a splash of soy sauce and minced garlic.
- In the same skillet, toast the uncooked rice for 1–2 minutes until fragrant.
Cooking
- Pour in the chicken broth and stir in half of the BBQ sauce mixture. Return the chicken to the skillet and drizzle the remaining sauce over the top.
- Cover the skillet and let it simmer on low heat for 15 minutes.
- After 15 minutes, add the mixed vegetables, cover again, and cook for an additional 5 minutes until rice is tender.
Serving
- Let the dish sit for about 5 minutes before serving. Garnish with chopped green onions.

For a deeper flavor, consider marinating the chicken in the BBQ sauce mixture for a few hours. You can substitute chicken with turkey or tofu, and use brown rice for a healthier option, but cooking time will vary.
