  • 1/4 cup honey
  • 1/4 cup lime juice
  • 2 pieces chicken breasts Can substitute with turkey or firm tofu.
For the Dish
  • 2 cups cooked rice Can use brown rice for added nutrition.
  • 1 piece avocado, sliced Fresh avocado to complement the dish.
  • to taste Salt and pepper
  • for garnish Fresh cilantro

Method
 

Preparation
  1. Mix the honey and lime juice in a bowl to create the marinade.
  2. Add the chicken breasts to the marinade, ensuring they’re well coated. Allow them to soak for at least 30 minutes.
Cooking
  1. Heat a grill or skillet over medium heat and cook the marinated chicken for 6-7 minutes on each side, or until fully cooked and golden brown.
  2. Once cooked, slice the chicken into strips for easy layering.
Assembly
  1. In a serving dish, create a base layer of rice.
  2. Arrange the sliced chicken on top, followed by the fresh avocado slices.
  3. Finish by seasoning with salt, pepper, and a sprinkle of fresh cilantro. Serve immediately and enjoy!

Notes

For extra flavor, consider serving with grilled vegetables or a salad. Drizzle extra honey or sprinkle chili flakes for enhancement. Store leftovers in an airtight container for up to 3 days.
