Ingredients
  

For the chicken
  • 3-4 pieces boneless, skinless chicken breasts About 1.5–2 lb total
  • 1 cup low-sodium chicken broth
  • 1-2 sprigs fresh herbs (thyme or rosemary) or 1 tsp dried
  • 1 piece sweet onion, diced
  • 3 cloves garlic, minced or 1 tsp garlic powder in a pinch
  • to taste Salt
  • to taste Pepper
  • 1/2-1 tsp smoked paprika
  • 2 tbsp olive oil
  • 2 tbsp lemon juice

Method
 

Preparation
  1. Gather all your ingredients and pat the chicken dry.
  2. Select the sauté function on the Instant Pot and heat the olive oil until shimmering.
  3. Add in the diced onion and minced garlic, cooking for 2–3 minutes until fragrant.
  4. Place the chicken breasts in the pot. Season generously with salt, pepper, smoked paprika, and your choice of herbs.
  5. Pour in the chicken broth and lemon juice.
Cooking
  1. Secure the lid and set the Instant Pot to High Pressure for 10 minutes.
  2. After cooking, allow a natural release for 5 minutes, then quick release the remaining pressure.
Finishing
  1. Remove the chicken, let it rest for a couple of minutes, then shred or slice.
  2. Serve it over rice, pasta, or integrate it into your favorite salads or tacos.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to three months. Don’t rush the natural release to retain moisture.
