Ingredients
  

Seafood
  • 1 lb shrimp, peeled and deveined Use freshest shrimp available.
  • 1 lb calamari, cleaned and cut into rings Tenderize while cooking.
Dressing and Seasoning
  • 1/4 cup fresh lemon juice Freshly squeezed for best flavor.
  • 1/4 cup extra virgin olive oil For a rich finish.
  • to taste salt
  • to taste black pepper
Herbs
  • 1/2 cup fresh parsley, chopped Add flavor and freshness.
  • 1/2 cup fresh basil, chopped Enhances the salad's aroma.

Method
 

Cooking the Seafood
  1. Bring a pot of water to a boil.
  2. Add the shrimp and calamari. Cook until the shrimp are just pink and the calamari is tender, about 2-3 minutes for shrimp and a bit longer for calamari.
  3. Drain the seafood and let it cool.
Combining Ingredients
  1. In a large mixing bowl, toss together the cooled shrimp, calamari, chopped fresh herbs.
  2. Drizzle generously with fresh lemon juice and a splash of olive oil.
  3. Season with salt and pepper to taste, mixing gently to combine.
Serving
  1. For the best flavor, serve the salad chilled!
