Ingredients
  

Graham Cracker Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
Key Lime Filling
  • 2 cups sweetened condensed milk
  • 3/4 cup key lime juice (freshly squeezed for best flavor) Can substitute with regular lime juice.
  • 1 tablespoon lime zest
  • 3 large egg yolks For a thicker filling, you can add an extra egg yolk.
Toppings
  • Whipped cream for topping
  • Lime slices for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until it resembles wet sand.
  3. Firmly press the mixture into the bottom of a greased baking dish to form a solid crust.
Cooking
  1. In a separate bowl, whisk together sweetened condensed milk, key lime juice, lime zest, and egg yolks until smooth and creamy.
  2. Pour the lime filling over the crust, spreading it evenly with a spatula.
  3. Bake in the preheated oven for about 15-20 minutes, or until set and no longer jiggles in the center.
Cooling and Serving
  1. Allow the bars to cool at room temperature before transferring to the fridge to chill for at least 2 hours.
  2. Once chilled, cut into bars, add a dollop of whipped cream, and garnish with fresh lime slices before serving.

Notes

Store in an airtight container in the refrigerator for 3-5 days. Freeze wrapped tightly for up to three months.
