Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until it resembles wet sand.
- Firmly press the mixture into the bottom of a greased baking dish to form a solid crust.
Cooking
- In a separate bowl, whisk together sweetened condensed milk, key lime juice, lime zest, and egg yolks until smooth and creamy.
- Pour the lime filling over the crust, spreading it evenly with a spatula.
- Bake in the preheated oven for about 15-20 minutes, or until set and no longer jiggles in the center.
Cooling and Serving
- Allow the bars to cool at room temperature before transferring to the fridge to chill for at least 2 hours.
- Once chilled, cut into bars, add a dollop of whipped cream, and garnish with fresh lime slices before serving.
Notes
Store in an airtight container in the refrigerator for 3-5 days. Freeze wrapped tightly for up to three months.
