Preparation
- Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish.
- In a mixing bowl, combine the all-purpose flour, powdered sugar, and salt. Cut in the softened butter until the mixture becomes crumbly.
- Press this crumb mixture evenly into the bottom of the prepared baking dish, forming a crust.
Making the Filling
- In a separate bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
- Pour the lemon mixture over the crust in the baking dish.
Baking
- Bake for 20-25 minutes, or until the filling is set and slightly golden.
- Allow to cool, then dust with powdered sugar before cutting into bars.
Notes
Serve with whipped cream or vanilla ice cream. Garnish with fresh mint leaves or additional lemon zest for extra flair.
